How To: Cranberry Nut Bread

As November ends, seasonably chilly weather is rolling in. It’s getting close to winter, you guys. And nothing says, “Winter” to me like cranberry bread with orange zest and walnuts. This is a beautiful way to use our ingredient of the month (also, cranberry sauce where you use orange juice in place of water–that is some good stuff). This delicious loaf bread is simple to make, too! Without further adieu, here is the recipe!

Cranberry Fruit Nut Bread

  • Servings: makes 12 slices

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup butter (1/2 a stick)
  • 1 teaspoon grated orange peel
  • 3/4 cup orange juice
  • 1 well-beaten egg
  • 1 cup fresh cranberries, coarsely chopped
  • 1/2 cup of chopped nuts (I use walnuts)

How To

Preheat your oven to 350 degrees.

Butter and flour a 9x5x3 inch pan.

Sift together dry ingredients (first 5 ingredients). Cut in the butter. Combine orange peel, juice, and egg. Add to the dry ingredients and mix it just till moistened. Fold in berries and nuts. Turn into that buttered and floured pan.

Bake at 350 degrees for 60 minutes.
